Cheesy Cauliflower Casserole with Pork Mince

Ground pork marinara covered with cauliflower and topped with cheese, makes an amazingly good comforting casserole your family will love. {low carb, gluten free, clean eating}

This cheesy casserole is high in flavors and low in carbs! :) If you’re a cauliflower lover plus you love tomato-y ground meat, you’ll love this casserole. The bottom layer of the casserole is a delicious and rich pork mince in marinara sauce, the second is a firm layer of cauliflowers, all topped with a lot of cheese. Sounds good, isn’t it?

First prepare the pork mince marinara using ground pork, tomato puree, onion, garlic and herbs. Cook them into a rich and hearty sauce, this will be the bottom layer of the casserole. While the meat is cooking, boil or steam the cauliflower florets, until they are tender. Transfer the pork into a baking dish, then spread the cauliflower to cover the meat, finally sprinkle with cheese generously. Bake for 15 minutes, then enjoy! Well, this casserole recipe is very simple, yet the result is astonishingly good and flavorful.

My cauliflower casserole is easy to prepare and is bursting with flavors.  The casserole could be an easy weeknight dinner that can be assembled the night before, then baked when you come home from work. Also you can use leftover Bolognese sauce or your favorite ground pork/beef/ turkey marinara in it. It is also great as a leftover because the flavors really intensify.


This is the best low carb casserole you can make from cauliflower, which has also some thick, hearty and super meaty ground pork marinara sauce in it. Plus the melted cheese on the top! Yummy! Who doesn’t love that? Enjoy!

Cheesy cauliflower casserole with pork mince marinara is high in flavors and low in carbs, great comforting weeknight dinner you'll love. {Gluten free, low carb}
  • 500 g | 1.1 lbs pork mince
  • 1 onion
  • 2 cloves of garlic
  • 1 tablespoon olive oil
  • ½ teaspoon oregano
  • ¼ teaspoon tyhme
  • ½ teaspoon paprika
  • 1 cup tomato puree
  • salt
  • pepper
  • 1 medium cauliflower
  • ½ cup grated cheese (Parmesan, Cheddar)
Let's get started!
  1. Heat one tablespoon olive oil in a large skillet. Add the chopped onion, cook for 1 minute, then add the ground pork. Cook the meat on high heat until it turns white and the water evaporates, then season with salt, pepper, paprika, thyme and oregano. Break up the pork into small pieces, using a spatula.
  2. Add the tomato sauce, stir well. Cook the pork on medium heat for 30-40 minutes, stir occasionally. Add 1-2 tablespoons form the cauliflower's cooking water if necessary.
  3. Bring to a boil a pot of salted water. Cut the cauliflowers into florets, transfer them to the pot and cook for 8-10 minutes, until they are tender. Then drain them well and set aside.
  4. Preheat the oven to 200 °C| 400 °F. Grease slightly a baking dish with olive oil.
  5. When the pork mince is ready, transfer it into a greased baking dish, spread it out.
  6. Top the meat with the cooked cauliflower florets, then scatter the top of the casserole with cheese.
  7. Bake for 15 minutes, until the cheese is melted.
  8. Remove from the oven and serve.
