Easy Baked Chicken Thighs

Simple and easy oven baked chicken thighs, made with just a handful of ingredients in a little more than one hour, resulting in juicy and crumbly meat + crispy skin. This basic garlic and smoked paprika chicken makes a perfect meal for every occasion {keto, low carb, paleo, gluten free, dairy free}

This basic baked chicken recipe gives you some crumbly and tender chicken meat under the crispy skin, that falls off the bone. Sounds yummy? It is, indeed!

One hour and just a few ingredients you surly have on hand is all it takes to make this easy weeknight dinner. When we don’t wish a fancy dinner, or don’t have time to be creative, I usually make this easy chicken dinner. This is a basic recipe doesn’t require prior shopping, you’ll probably have the necessary seasons in you kitchen cupboard. Well, this is a jolly joker recipe, which is good to know and it’s perfect by itself, but if you’ve got bored of it, you can easily upgrade to your liking.

This dish requires a really fast preparation: just rub the thighs with simple everyday seasons, like salt, pepper, garlic powder, parsley and paprika, preferably Hungarian smoked paprika. Lay the seasoned chicken thighs into a prepared baking dish, let it rest 10 minutes before baking. Cover the your baking dish with foil and bake for 40-45 minutes, depending how tender you like the meat. You’ll get some moist and tender meat when allowed to cook in its own juices from the fatty skin.

Baking the chicken covered in the oven, then roasting or broiling uncovered for the last 15 minutes, results in very moist, crumbly and juicy meat under the crispy skin.

  • 1 kg | 2.2 lbs chicken thighs (skin and bones on)
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder or 3-4 cloves of garlic
  • 1 teaspoon smocked paprika
  • ½ teaspoon dried parsley
  • salt
  • pepper
Let's get started!
  1. Rinse and pat dry the chicken thighs, trim the unwanted parts.
  2. Rub both sides of the chicken (even under the skin) with salt, pepper, paprika, garlic powder and parsley.
  3. Grease a large baking pan with two tablespoons olive oil. Place the chicken thighs skin down into the baking pan. Cover the dish with foil.
  4. Set aside and let it rest for10-15 minutes, or until the oven preheats.
  5. Heat the oven to 200°C | 400°F.
  6. Place the chicken into the oven and bake for 40-45 minutes.
  7. Carefully take out the baking dish from the oven, remove the foil and turn each piece of chicken with skin side up.
  8. Bake uncovered for additional 15-20 minutes, until the skin turns crispy.
  9. Remove from the oven and serve. Garnish with fresh herbs if you desire.
