Roasted veggies with cheese

  • 1 medium zucchini
  • 200 g mushroom
  • 1 medium broccoli
  • 1 medium cauliflower
  • 1 red onion
  • 150 g green peas
  • 150 g baby carrots
  • 150 g grated vegan cheese
  • 1 teaspoon oregano
  • ½ teaspoon rosemary
  • salt
  • black pepper
Let's get started!
  1. Wash all the veggies and cut them into equal pieces.
  2. Cook the baby carrot, broccoli and cauliflower in salted boiling water for 5 minutes, then drain them well. If you are using frozen vegetables, cook them for 5-7 minutes, as well.
  3. Put the veggie cubes into a large bowl, pour 3 tablespoons of olive oil and season them with salt, pepper, rosemary and oregano, stir the veggies carefully.
  4. Preheat the oven to 180°C/355°F. Line a large baking tray with parchment paper.
  5. Place the veggies on the baking tray and roast them for 15-18 minutes, until are tender.
