1 cup | 120g finely shredded zucchini (about ½ medium zucchini)
1 teaspoon cinnamon
1 teaspoon vanilla extract
¾ cup vegan/dairy-free milk or water
½ banana
3-4 strawberries
10 raspberries
2-3 dark chocolate chips (optional)
pinch of coconut flakes (optional)
Let's get started!
Shred the zucchini finely, using a cheese grater.
Add the oats to a pan and add milk (or water) until the oats are covered. Bring it to boil on low heat, stir it occasionally.
When the oats soaked the most of the milk/water, add the shredded zucchini, vanilla extract and cinnamon, mix it well and cook on low heat for 5-10 minutes depending how soft do you like the oats, (add more liquid if desire).
Top your porridge with banana slices, raspberries, strawberries, coconut flakes and/or dark chocolate.
