Almond Chocolate Pear Cake

This moist pear cake with crunchy almonds and dark chocolate chunks in it, is an easy almond flour cake made in a food processor {low carb, sugar free, gluten free}
  • 1 cup almond flour (100 g)
  • ½ cup whole almonds (70 g)
  • 1 stick butter (100 g), room temperature
  • ½ cup low carb sweetener or sugar (80 g)
  • 2 eggs
  • 4 ripe pears, peeled and cored
  • ½ cup sugar free dark chocolate chopped or chips (70 g)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract (optional)
Let's get started!
  1. Preheat the oven to 160°C | 320 °F. Lightly grease a 8 inch springform cake thin with butter.
  2. Place the whole almonds into the food processor. Blitz until the almonds are chopped.
  3. Add the eggs, butter and half of the pears to the food processor. Blitz until the mixture is smooth.
  4. Add the sweetener, baking powder and almond flour. Pulse until all ingredients are well incorporated.
  5. Add the chopped dark chocolate or chocolate chips and gently fold them into the batter (use a spatula).
  6. Pour the batter into the prepared cake pan. Arrange the pear slices on top of the cake as you like.
  7. Bake the cake for 40 minutes or until the inserted toothpick comes out clean.
  8. Cool the cake on a wire rack before slicing.
