Pan fried salmon with zucchini

Pan fried garlic paprika and butter salmon served over sautéd zucchini slices, all drizzled with garlicky sour cream {keto, gluten free, low carb}

Pan fried salmon with zucchini and garlicky sour cream is a fast and simple healthy lunch or dinner recipe. This great dish is prepared in a single frying pan, is super easy to prepare and is ready in max 30 minutes.

The ingredients of this simple dish are one medium zucchini and one salmon fillet per person, one tablespoon butter and olive oil, a couple of garlic cloves, sour cream, salt, freshly ground black pepper and paprika to taste.

First, fry the zucchini slices, then cook the salmon fillets, while the fish is frying, prepare the garlic sour cream and that’s it, easy and simple, right? Place the zucchini slices on a plate, place the salmon on the zucchini and top it with the garlic sour cream. Twist some lemon juice on the salmon if you desire.

This great dish is low-carb, gluten-free and also a great source of omega-3 fatty acids. The spicy soft zucchini and the fried salmon are a great match, also the garlicky cream goes perfectly with this pan-fried dish. It’s a flavourful and easy recipe for using salmon and zucchini.

Ingredients
  • 2 medium zucchini
  • 2 salmon fillets
  • 1 tablespoon butter
  • ½ teaspoon paprika
  • salt
  • black pepper
  • 1 tablespoon olive oil
  • 2-3 cloves of garlic
  • 4 tablespoons sour cream
Let's get started!
  1. Rub the salmon fillets with salt, black pepper and paprika and brush lightly with ½ tablespoon olive oil, set aside.
  2. Slice the zucchini into 1,5 cm / 0,5 inch thick slices and put them into a bowl. Sprinkle with salt and pepper to taste, besprinkle with ½ tablespoon olive oil and set them aside for 5 minutes.
  3. Melt one tablespoon butter in a large skillet. When it's melted add the zucchini slices. Sauté them on medium heat for 5 minutes, then turn them over and cook another 3-4 minutes, until they are lightly browned.
  4. When the zucchini is cooked, drain them and remove from pan and keep them warm.
  5. Add the fish to skillet skin-side down and fry them for 5 minutes on medium heat, then turn the salmon over and sauté for a further 2-3 minutes, or until cooked through.
  6. While the salmon is cooking, prepare the garlicky sour cream: crush 2-3 garlic cloves and mix with 4 tablespoons sour cream, season with a pinch of salt.
  7. Place the salmon fillets on the zucchini slices and top the dish with garlicky sour cream. Garnish with lemon if you desire.

It was delicious, though next time I will use less garlic, the taste stays in my mouth. Luckily I don’t have to kiss anyone today!
