Salmon Feta Zoodles Bowl

This super easy one skillet garlic butter salmon with cherry tomatoes, feta cheese and zoodles is a healthy and amazingly delicious bowl, that comes together in just 20 minutes. {keto, low carb, gluten free}

I’ve tried so many zoodle recipes, but I haven’t tried combining them with salmon, until yesterday when I had just half an hour to prepare something to eat. There was salmon in my freezer and a zucchini in my fridge, when came the idea to use both of them in a healthy and quick dinner recipe. I wasn’t disappointed! The flavors were amazing in this fresh and light one-pot dinner.

This fresh and tasty zoodles bowl is super easy to prepare, comes together in one single skillet in less than half an hour, plus is incredibly healthy. Can you imagine a better dinner recipe, if you have just a handful of ingredients and no time, also you want to eat something healthy?

Salmon is full of good fats (the famous and needed omega 3 fatty acids) and protein, is quick and easy to cook, makes a great choice to have in regular dinner rotation, also tastes so good. Garlic butter pan fried salmon is a common dish in most households, we love it too. Searing in a garlic butter lemon mixture makes the salmon taste even better. This time I diced the salmon into bite-sized cubes to cook along some cherry tomatoes and zucchini noodles.

By the way, this healthy bowl recipe requires just 7 ingredients, not counting the salt and pepper. Feta and cherry tomatoes add some extra flavors and deliciousness to this amazing zucchini-salmon bowl, plus drizzling the bowl with lemon juice makes this meal fresh and light.

This super easy one skillet garlic butter salmon with cherry tomatoes, feta cheese and zoodles is healthy bowl, that comes together in just 20 minutes. {low carb, gluten free}
Ingredients
  • 2 salmon slices (about 200 g / 7 oz)
  • 1 cup / 6-7 pieces of cherry tomatoes (halved)
  • 2 cloves of garlic (crushed)
  • ½ tbsp salted butter
  • 1 tbsp lemon juice from ½ lemon
  • 1 large or 2 small zucchini
  • ½ cup feta cheese
  • salt
  • pepper
Let's get started!
  1. Cut the salmon into bite-size pieces. Season them with salt and pepper.
  2. Heat the butter in a large skillet. Add the salmon and cook on medium heat for 3-4 minutes.
  3. Add the cherry tomatoes and sauté them along the salmon.
  4. While the tomatoes and salmons are cooking, prepare the zucchini noodles, using a spiralizer or vegetable peeler.
  5. Add the zucchini noodles to the skillet, fold in gently and cook for 2 minutes, until the zoodles are cooked but still crunchy. Remove from heat and drizzle all with lemon juice, stir gently to combine.
  6. Crumble the feta cheese all over the zoodles before serving.
