Strawberry Cottage Cheese Cake

Simple, quick and healthy mid-week dessert: strawberry and cottage cheese cake made with coconut flour {gluten-free, refined sugar free, low carb}

Last Tuesday evening we craved for dessert and since we are eating low carb on weekdays, I had to prepare something delicious and also healthy without any sugar or flour. We had in our fridge fresh strawberry and cottage cheese so I decided to bake something with these two. I was looking on Pinterest to find the best low carb dessert recipe using cottage cheese and strawberries but I couldn’t find any, so I created mine. Here it is: strawberry cottage cheese cake made with coconut flour and stevia.

I’m such a huge cottage cheese fan. I love the mild flavour of this fresh soft cheese which can be used in various ways. My favourite, of course, is adding cottage cheese to desserts, cakes and pancakes. Cottage cheese gives a creamy and soft texture to your treat, pairing it with fruits or jam makes the dessert heavenly delicious. If I sparked your interest, take a look at my cottage cheese and strawberry jam slab pie recipe too.

This cottage cheese cake is very easy to prepare: in a large bowl beat the eggs, then add the sweetener, flour, milk, baking powder and cottage cheese and stir until is well combined and smooth. Pour the batter into a prepared baking pan and top the cake with strawberry slices. That’s all, easy, isn’t it? Bake the cake for 35-40 minutes, then cool before slicing.

This healthy cake is a creamy, not too sweet, light dessert, with a slight coconut flavour. I prepared the cake with stevia powder, but luckily the taste of stevia was slightly noticeable – I don’t really like the bitter aftertaste of it. If you’re not using stevia, feel free to replace it with your favourite sweetener in the right proportion.

This creamy and also crumbly cottage cheese cake harmonizes perfectly with strawberry. Serve the cake with fresh strawberries for a better result. Enjoy!

  • 2 eggs
  • 250 g | 1⅓ cups cottage cheese
  • ½ cup milk (I used skimmed milk)
  • ¼ cup | 4 tbsp coconut flour
  • 2 tbsp stevia powder (or 4 tbsp brown sugar)
  • ½ tsp baking powder
  • pinch of salt
  • 4-6 strawberries sliced
  • ½ teaspoon butter to grease the pan
Let's get started!
  1. Grease a baking pan or pie pan with butter.
  2. Preheat the oven to 200 °C | 390 °F.
  3. In a large bowl beat the eggs with the sweetener, until it turns white and foamy, then add the coconut flour, baking power, milk, cottage cheese and a pinch of salt. Whisk until well combined and the cottage cheese is smooth.
  4. Pour the batter into the prepared pan. Place the strawberry slices on top of the cake, slightly press them into the batter.
  5. Bake until a wooden tooth pick inserted in the center comes out clean, about 35-40 minutes.
  6. Let the cake cool completely in the pan and slice. Serve it from the pan with fresh strawberries.
