Zucchini oats breakfast bowl

Easy cooked zucchini oats breakfast bowl, topped with berries, banana, chocolate and coconut flakes – a hearty and nutritious way to eat your daily porridge  {with vegan and gluten-free option}

Have you ever heard of “zoats”? Zoats = zucchini + oats. Zoats refers to porridge with added shreds of nutrient-rich zucchini, which makes the ordinary (boring?) oats healthier, adding vitamin C, vitamin B, Potassium, protein and fibre to your meal. Sounds strange, but trust me, it’s surprisingly delicious.

The taste of the porridge is oat-y, just add your favorite toppings and you won’t even notice it’s a vegetable in your breakfast bowl. So why not to add some zucchini into your porridge for a nice softness and some extra fibre? In just 15 minutes you’ll get a deliocious, fibre, vitamin and mineral rich hot porridge.


Preparing zoats is easy, cook the usual amount of rolled oats with milk or water of choice, add the shredded zucchini, stir it well and cook for a few minutes. Use slightly less liquid to make your porridge, because the zucchini contains a lot of liquid and will make you porridge watery. Add spices or sweetener if you desire and top your oats with your favorite fruits and/or chocolate as you like.

My zoats breakfast bowl was flavored with cinnamon and vanilla and topped with berries: strawberry and raspberry, banana, dark chocolate and coconut flakes. I did not felt it necessary to add any sweetener, with this topping my porridge was just perfect.

  • ½ cup rolled oats (gluten-free)
  • 1 cup | 120g finely shredded zucchini (about ½ medium zucchini)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¾ cup vegan/dairy-free milk or water
  • ½ banana
  • 3-4 strawberries
  • 10 raspberries
  • 2-3 dark chocolate chips (optional)
  • pinch of coconut flakes (optional)
Let's get started!
  1. Shred the zucchini finely, using a cheese grater.
  2. Add the oats to a pan and add milk (or water) until the oats are covered. Bring it to boil on low heat, stir it occasionally.
  3. When the oats soaked the most of the milk/water, add the shredded zucchini, vanilla extract and cinnamon, mix it well and cook on low heat for 5-10 minutes depending how soft do you like the oats, (add more liquid if desire).
  4. Top your porridge with banana slices, raspberries, strawberries, coconut flakes and/or dark chocolate.
  5. Enjoy!
