Chicken Breast with Mango Avocado Salsa

Easy and amazingly delicious marinated garlic chicken breast with mango avocado salsa – a great tropical dish for these cold November weekdays. {paleo, dairy-free, gluten-free, clean eating}

This garlic chicken salsa makes a perfect healthy, clean and nutritious dinner. The interesting combination of flavors will get you to lick your all ten fingers. The fresh and colorful salsa has a slightly sweet flavor, also a light and creamy texture, it pairs really well with this garlicky marinated chicken breast. It was the first time I made this appetizing salsa (with chicken), but definitely not the last. Both turned out to be great: the chicken was garlicky and crumbly, the salsa was refreshing, overall it was a tasty and easy meal, which made us dreaming about sunny tropical beaches on that rainy November evening.

Salsa is such an interesting food: it’s sweetish, creamy, light and full of flavors. Preparing it is very easy: chop, mix and serve! :)  The best part is you can add more veggies in it, to your liking. Today I prepared a basic mango avocado salsa which also contains red onion, bell pepper, cilantro and lime. To highlight the refreshing flavor of this mango avocado salsa, I prepared a delicious spicy marinade for the chicken. This marinade is our all time favorite, I usually make this recipe if we are craving for simple chicken dinner. This olive oil and garlic marinade is simple, easy and it goes well with any kind of meat. Chicken breast marinated in this marinade turns out to be a spicy, garlicky, crumbly and very likable.

The marinade is very simple and it’s ready in 5 minutes, contains garlic, oregano, chili powder and olive oil. Leave the chicken breast in the marinade to absorb the flavors for at least 30 minutes, then grill or pan-sear your marinated chicken breast fillets. Spoon this refreshing mango avocado salsa on top of the cooked chicken and serve with rice, quinoa or cauliflower rice (if you are eating paleo).

Chicken Breast with Avocado Mango Salsa

Chicken Breast with Avocado Mango Salsa {paleo, gluten-free, dairy-free, clean eating}
  • Chicken breast:
  • 3-4 boneless, skinless chicken breasts
  • 5 tbsp olive oil
  • 2 garlic cloves (chopped)
  • ½ teaspoon chili powder or paprika
  • ½teaspoon oregano
  • salt
  • pepper
  • Mango Avocado salsa:
  • 1 mango
  • 1 large ripe avocado
  • 1 medium red onion
  • ½ (red) bell pepper
  • 1 tbsp lime juice
  • 1 teaspoon fresh cilantro (chopped)
  • salt and black pepper to taste
Let's get started!
  1. Whisk together the olive oil, oregano, chopped or minced garlic, paprika, salt and pepper, then transfer the marinade into a resealable bag or a food container. Place the chicken breast fillets in the bag, rub the marinade all over the chicken and seal the bag/container. Refrigerate the chicken for 1 hour (or at least 30 minutes).
  2. While the chicken is marinating, prepare the mango-avocado salsa: dice the bell pepper, avocado, onion and mango into small pieces, transfer them in a large bowl. Season with fresh cilantro, salt and pepper to taste, drizzle with lime juice, mix it all together and set aside.
  3. Prepare a grill pan or skillet, preheat 1 tablespoon olive oil, then transfer the marinated chicken and grill/ sear the chicken for 6-8 minutes each sides, until turns golden and is cooked through.
  4. Transfer the chicken on a plate and top with the salsa.
  5. Serve with rice or quinoa.
