Hawaiian Baked Chicken

Here’s another chicken breast recipe! Again. We eat at least 3 times a week chicken breast and we still love it! It’s so versatile, easy to make and delicious! However, baked chicken breast is my absolute favorite. Baked chicken breast with cheese?! It’s heaven!

I was craving something sweetish for dinner, also I had a can of pineapples in my pantry. So the idea of Hawaiian chicken was born.

You’re looking at a recipe which is very simple to prepare and requires just 5 ingredients: chicken breast fillets, a can of pineapples, grated cheese (Parmesan or Cheddar), garlic powder and olive oil (also, salt and pepper of course). First, rub the chicken breasts with salt, pepper and garlic powder, then cook them in a skillet, until it turns white. Then transfer the chicken breasts into a baking dish, top them with pineapple chunks or slices and pour the pineapple juice into the baking dish. Bake until chicken is tender, then sprinkle the top with grated cheese. Bake uncovered until the cheese is melted. I recommend serving this pineapple chicken over rice (our side was brown rice) or noodles.

This recipe is incredibly quick and easy to make, it’s gluten and refined sugar free, so this chicken bake is genuinely good for you and that tastes a million times better than take out.

Ingredients
  • 2 large skinless boneless chicken breasts
  • 3-4 slices of pineapple from can or ½ can of pineapple chunks
  • 3 tablespoons pineapple juice (reserve it from can)
  • ⅓ cup grated cheese (Parmesan or Cheddar)
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • salt
  • pepper
Let's get started!
  1. Preheat the oven to 200°C | 400°F.
  2. Half the chicken breast fillets lengthwise. Rub the slices with salt, pepper and garlic powder.
  3. Heat one tablespoon olive oil in a skillet, when it's hot add the chicken and cook for 3-4 minutes, then turn them and cook for another 3-4 minutes, until the chicken turns white.
  4. Transfer the chicken breast and the olive oil from the skillet into a baking dish. Place the pineapple on top of the meat. Pour 3 tbsp of pineapple juice from can over chicken. Cover the baking dish with foil.
  5. Bake the chicken for 25 minutes until tender, then remove from oven and sprinkle grated cheese over the meat.
  6. Place back the chicken into the oven (uncovered) for 4-5 minutes, until the cheese is melted and has a golden color.
  7. Serve with rice!
