Zucchini and mushroom couscous with feta cheese

Zucchini and mushroom couscous with feta cheese

  • half cup couscous (100 g)
  • 100 g thinly sliced ham
  • 1 zucchini
  • 250 g champignon
  • half a sweet pepper
  • 100 g feta cheese
  • 1 tablespoon butter
  • salt
  • lemon pepper
  • ¼ teaspoon coriander
Let's get started!
  1. Pour 1 l boiling hot water on the couscous, cover it and let it stand until you prepare the vegetables.
  2. In a deep pan start to melt the butter, when it's melted add the chopped ham and fry a bit. Wash the zucchini, slice it into little pieces and add to the ham. Wash the mushrooms, slice them too and throw it into the pan.
  3. Add the salt, lemon pepper, sprinkle with the coriander and leave them to simmer. Cook it until the juice evaporates.
  4. Cut the pepper into little pieces and add to the crunchy vegetables. Cook for 5 minutes.
  5. Remove the pan from heat when the vegetables are ready and add them to the couscous. Combine them at the end crumble feta cheese on top of it.
  6. Serve immediately.
