Zucchini Pasta with Garlic

This zucchini pasta recipe is an easy vegetarian, vegan and gluten-free recipe. For not vegetarians, you can add chopped chicken breast fillets.

Zucchini Pasta with Garlic

  • 500 g spaghetti
  • 3 zucchini
  • 3 tomatoes
  • 3 cloves of garlic
  • 1 red onion
  • pinch of basil
  • 4 tablespoons olive oil
  • salt
  • pepper
Let's get started!
  1. Fry the chopped onion in a pan, in 2 tablespoons olive oil, add the chopped tomatoes, the grated garlic, the basil and a little salt. Mix it and after a couple of minutes put it aside.
  2. Cut the zucchini into thin slices and fry it in hot oil until is crispy.
  3. When you are done, mix the crispy zucchini with the onion-garlic-tomato sauce, season with salt and pepper and pour it on the cooked spaghetti.
  4. If you like, you can add grated cheese on top of the dish.
