This zucchini pasta recipe is an easy vegetarian, vegan and gluten-free recipe. For not vegetarians, you can add chopped chicken breast fillets.
Diet: vegetarian, vegan, gluten-free,
- 500 g spaghetti
- 3 zucchini
- 3 tomatoes
- 3 cloves of garlic
- 1 red onion
- 4 tablespoons olive oil
- Fry the chopped onion in a pan,
in2 tablespoons olive oil, add the chopped tomatoes, the grated garlic, the basil and a little salt. Mix it and after a couple of minutes put it aside.
- Cut the zucchini
intothin slices and fry it in hot oil until is crispy.
- When you are done, mix the crispy zucchini with the onion-garlic-tomato sauce, season with salt and pepper and pour it on the cooked spaghetti.
- If you like, you can add grated cheese on top of the dish.
